• 1 Brioche bun
  • 1 Lobster tail
  • 1 Spring onion
  • 1 Apple (Granny smith)
  • A few chives stalks
  • Wasabi mayonnaise
  • Olive oil
  • Salt and pepper
  • 30 gr of Céleste Caviar




    Boil the lobster until it is cooked, then cut it into small pieces.

    Mix the lobster meat with salt, pepper, olive oil, a little lime juice and chopped spring onion.

    Cut the apple into very thin strips and place in lime juice for a few minutes.

    Cut open the brioche length wise and place it into the oven until a lightly toasted.

    Fill the brioche with the lobster mixture.

    Garnish it with the slices of apple and wasabi mayo. 

    Top it off with a generous spoonful of Céleste Caviar.
