Our Ossetra caviar has a smaller and firmer grain than the Beluga’s caviar.

The colour can vary from deep brown to yellow gold. The more gold the caviar looks, the older the sturgeon, the richer the flavour.

The magical blend of the distinct flavour of Ossetra caviar range from an earthy aroma to a creamy walnut mix with hints of the salty sea. The texture of this caviar is silky and melts in the mouth offering a purely gastronomic experience.

The Ossetra caviar comes from the Acipenser Gueldenstaedtii sturgeon also known as the Danube sturgeon or the Diamond sturgeon. It is found in the Caspian Sea.

Serving tips for our caviar

For serving and tasting, be careful not to use metal utensils but rather one made of mother-of-pearl.

Acipenser gueldenstaedtii

The Acipenser Gueldenstaedtii sturgeon is the source of our Iranian Ossetra. The Caspian Sea is home to this species of fish. These sturgeons are anadromous fish, meaning they spend most of their time in saltwater before migrating upstream to lay eggs in freshwater.

Around the ages of 8 to 10 years, the Acipenser Gueldenstaetii produces a magnificent roe. In comparison to other types of sturgeon, this species matures and reproduces slowly. These sturgeons are typically +/-115 kg in weight and +/-2m35 in length.

These magnificent creatures have a life expectancy of up to 48 years.
